Making Wine

Dawning Day Farms is a small family owned and operated micro-vineyard located in Exeter in the Southern Highlands of New South Wales.

This cool-climate region called for the planting of varieties like Chardonnay and Pinot Noir, along with our personal favourite Gamay.

  • Our 2021 vintage saw the first wine picked and produced from our own block after the 2020 grapes were smoke damaged from the Morton bush fires (all was not lost, we turned our grapes into ‘The Bandit’ Gin!). 

    We produce several wines under the Dawning Day brand in partnership with vineyards in the Southern Highlands and other regions within Australia including Rosé, Chenin Blanc, Fiano, Chardonnay, Pinot Noir, Shiraz, and our popular skin contact wine, ‘Skin Shady'.

    In barrel at the moment is our estate Chardonnay, Pinot Noir, Gamay and for those with some patience, a Methode Traditionelle Sparkling using our estate-grown Chardonnay and Pinot Noir is riddling away until 2024.

Making a Difference

The idea behind Dawning Day was to combine our passion for wine and winemaking with the desire to help those in less fortunate situations. How does that work? We donate 10% of Dawning Day Wine sales to those in need. 

  • Donations have been to places like: PopIn, Orana Hub, Refugee Connect, RPA, Challenge Southern Highlands, Wollongong Animal Rescue, Weave, Dandelion Foundation, Smith Family, Highland Grace, Good Will Only, Cancer Foundation, RFS, Red Cross, Smith Family, The Eve Project, ASRC Asylum Seekers, Interplast, Oz Harvest, Rainbow of the Southern Highlands, and Shoalhaven Homeless Hub.

    Donations total to date approx. $60,000.

Making a Home

Dawning Day Farms is the culmination of a 20 year long dream to own and run our own small vineyard. We have created what we like to think is a home away from home for our visitors.

  • Whether you are enjoying a stay at our boutique designer barn, visiting us as part of a group wine tour or enjoying a private tasting with our winemaker, Mike, we will make you feel welcome.

Keeping it Local

We also make a variety of farm produce onsite at Dawning Day Farms including Farmhouse Pickles, Hot-House Chilli Pickles, Pinot-gar (caramelised Pinot Noir vinegar) Bonfire Hot Sauce and Gin Pickles, made with a shot of our very own ‘The Bandit' Gin. 

And what do you do when a neighbour gives you 300 lemons? Make Limoncello of course! Our Dawning Day Limoncello is handmade with 100% local Southern Highlands lemons using a traditional recipe from the town of Sorrento in Italy.
